Best Chef in the Northeast Speaks to CIA Graduates

Fish & Game鈥檚 Zakary Pelaccio Delivers Keynote at CIA Commencement

Hyde Park, NY 鈥 Zakary Pelaccio, winner of the 2016 James Beard Foundation Award as Best Chef: Northeast, delivered the commencement address at the New York campus of The Culinary Institute of America on October 21. Pelaccio is co-executive chef and owner of two successful restaurants in Hudson, NY: Fish & Game and Bakar at BackBar.

The Hudson Valley native, who grew up in Scarsdale, is noted for influencing culinary trends like nose-to-tail cooking, gastropubs, and Brooklyn cuisine. With the opening of Fish & Game in 2013, he helped build the dining scene in the city of Hudson. The following year, Fish & Game was a Beard Award semifinalist for Best New Restaurant in America and it has twice been named to Wine Enthusiast鈥s list of America鈥檚 100 Best Wine Restaurants. Bakar at BackBar opened in summer 2016, influenced by the flavors of Southeast Asia. His second cookbook, Project No. 258鈥Making Dinner at Fish & Game, is scheduled for publication next year.
