New CIA Video Series Explores the Food of Portugal

Napa, CA 鈥 The Culinary Institute of America is now streaming the latest edition of its World Culinary Arts Video Series鈥攆eaturing the cuisine of Portugal鈥攁t . World Culinary Arts: Portugal is the 16th installment of the World Culinary Arts series.

The documentary explores the internationally-celebrated restaurants, markets, and kitchens of Lisbon and Porto. Join us on this culinary tour of Portugal, from Porto鈥檚 rocky coast where we sample the region鈥檚 bounty of seafood at Casa de Ch谩 da Boa Nova, to Marisqueira Cervejaria Ramiro, Lisbon鈥檚 famous seafood eatery where we sample barnacles, shrimp, prawns, and spider crab.

The program explores how Chef George Mendes of Michelin-starred restaurant, Aldea in New York City has brought Portuguese traditions to his menu. We also visit butcher Rodrigo Duarte as he shows us how to make traditional Portuguese chorizo at his shop Caseiro e Bom, in Newark, NJ.

Corporate Executive Chef at Unilever Food Solutions, Einav Gefen, co-hosts the series with an array of culinary experts. 鈥淧ortugal is an undiscovered culinary gem that deserves much greater appreciation,鈥 said Gefen. 鈥淚 love the emphasis on and respect for fresh, local ingredients and the delicate combination of land and sea we tasted in every dish,鈥 she said. I encourage people to learn more about the biodiversity of their own local seafood, and broaden the repertoire of their seafood menus.鈥

Winner of two James Beard Awards, the CIA鈥檚 World Culinary Arts program explores the best in food and cooking around the world. The documentary series focuses on a given country or region and examines its flavors, iconic recipes, produce, specialty ingredients, markets, street food, and most celebrated restaurants. Introduced in 2004, this digital media initiative is an outgrowth of the entire family of world flavor programs from the CIA, including the college鈥檚 flagship . From China, Mexico City, and Indonesia to Peru, Japan, Puerto Rico, and Scandinavia, viewers can explore the cuisines of more than 20 countries and regions around the world at .
