CIA to Open New Restaurant Concept at Pearl; Both a Restaurant and Classroom

San Antonio, TX 鈥 The Culinary Institute of America is opening a new restaurant at its campus at Pearl later this year. The yet-to-be-named concept will be located in the former Sandbar location adjacent to the CIA campus. It will replace the CIA鈥檚 current restaurant, , and become the new home of the as well.

Unlike any other restaurant in the San Antonio area, both the kitchen and dining room will double as classrooms. The restaurant鈥檚 executive chef and ma卯tre d鈥 will also be CIA faculty members teaching the advanced cooking and hospitality courses that are the capstone classes for CIA sophomores completing their associate degrees in Culinary Arts and Baking & Pastry Arts.

The dinner menu, still being developed, will feature ingredients from Texas farmers and ranchers. The restaurant鈥檚 unique design and open kitchen will welcome guests to an exciting, casual, and fun dining experience. There will be a full bar and curated wine and beer lists.

鈥淥ur students and faculty are hard at work developing the concept and menus and we look forward to sharing them with San Antonio and the Pearl community in the near future,鈥 says Waldy Malouf, the CIA鈥檚 senior director of food and beverage operations.

By dining at a CIA restaurant, guests will find themselves meeting and interacting with future big-name chefs and food industry leaders. Top names in San Antonio鈥檚 restaurant scene鈥攍ike Johnny Hernandez, Steven McHugh, Michael Sohocki, and Andrew Weissman鈥攁ll cooked for and served the public at during their time as students.

Through the fall semester, the restaurant will be open for dinner Tuesday through Saturday, 5:30鈥8:30 p.m. Starting next January, the CIA Bakery Caf茅 pop-up will reopen inside the restaurant with service during breakfast and lunch.
